Ode to Fondue – Our family fondue recipe.

Oh fondue, how I love you!

We first met many years ago, a family tradition on Christmas Eve.

My love for you has never wained, and I have learned much about your ways as time has passed.

Discovering your many varieties has only made my heart grow fonder.

The cheese, the broth, the chocolate.  You tease me so.

The original family still remains a favorite.

We love to share with friends and family, a perfect one pot meal.

Oh fondue, how I love you!


1 clove of garlic- halved
1 bottle of the cheapest beer you can stand to have in your house
2-3 cups shredded cheddar cheese
2-3 cups shredded jarlsberg cheese
1 loaf sour dough bread (or other artisan bread), cubed and broiled
1-2 large granny smith apples, cubed
Boiled potatoes, just steamed broccoli, carrots, or other various veggies

Have your dipping foods ready before preparing the cheese.  Rub the garlic on the inside of the pot to infuse it with flavor.  Add the beer (entire bottle if you are making a larger pot of cheese, half the bottle for less).  Let it boil in pot (you can do this on the stove or in an electric fondue pot).  Start by adding a little cheese at a time (to keep the cheese from sticking to together after it has been shredded, add a little flour-like a TBSP- this also helps to thicken it). Mix it into the beer.  When that cheese has sufficiently melted, add a little more.  Continue until all of the cheese has melted.  Turn the heat down a little if needed (or up!) and enjoy the awesomeness of beer cheese fondue with your friends and family!
